Mithais are desserts that are unique to India. Mostly made with rich ingredients like milk, dried fruit, sugar and clarified butter each region in India has its own unique range of colourful decadent sweets that never fail to impress. A slight hint of green cardamom powder gives most of these a beautiful aroma and taste that has always been associated with mithais.

Ingredients for Badami Puri Recipe

  • Refined flour (maida) 1 cup + for dusting

  • Almond paste 2-3 tablespoons

  • Rice flour 1/2 cup

  • Green cardamom powder 1/2 teaspoon

  • Ghee 1 tablespo

  • Milk as required

  • Cloves as required

  • Oil for deep-frying

  • Sugar 1 cup

  • Saffron a pinch

  • Mixed nuts chopped for garnish

Method

Step 1

Knead together refined flour, rice flour, almond paste, ¼ tsp cardamom powder and ghee with milk as required to a stiff dough.

Step 2

Divide the dough into equal portions, dust with some refined flour and roll out into small discs. Brush with some ghee, fold into triangles, roll out and prick all over with a fork. Secure with a clove.

Step 3

Heat sufficient oil in a kadai. Deep-fry prepared puris till golden brown. Drain on absorbent paper.

Step 4

Heat sugar in a non-stick pan. Add sufficient water, saffron and remaining cardamom powder, mix well and cook till a thick syrup is formed.

Step 5

Soak the fried puris in the sugar syrup, garnish with nuts and serve immediately.
