The cuisine of Andhra Pradesh is reputedly the spiciest of all Indian cuisine. Foods include both the original spicy Andhra cooking and Muslim-influenced Hyderabadi cuisine. Rice is the staple diet and is used in a wide variety of ways.
Hyderabadi cuisine is influenced by the Muslim population, which arrived in Andhra centuries ago. Much of the cuisine revolves around meat. It is rich and aromatic, with a liberal use of exotic spices, ghee, nuts and dry fruits.

Ingredients for Andhra Chilli Chicken - SK Khazana Recipe

  • Whole chicken cut into 2 breasts and 2 leg pieces on the bone 750 grams

  • Dried red chillies 10-12

  • Lemon juice 1 tablespo teaspoons

  • Salt to taste

  • Ginger 2 inches

  • Garlic cloves 7-8

  • Curry leaves 10-15

  • Yogurt 1/2 cup

  • Refined flour (maida) for dusting

  • Oil 2 tablespoons

  • Onion rings to serve

  • Lemon slices to serve


Step 1

Make some slits on all the chicken pieces and put them in a large bowl. Add 1 tablespoon lemon juice and salt and mix well. Set aside for 10-15 minutes.

Step 2

Blend together ginger, garlic, curry leaves, dried red chillies, remaining lemon juice and sufficient water to a fine paste.

Step 3

Add this paste to the chicken along with yogurt and salt and mix well. Keep the bowl in the refrigerator to marinate for 2-3 hours.

Step 4

Dust the marinated chicken pieces with flour.

Step 5

Heat oil in a non-stick pan. Place the chicken pieces in it and cook on high heat for 4-5 minutes. Flip, cover and cook till fully done.

Step 6

Serve hot with onion rings and lemon slices.
