The seed too can be kept for using. Heat oil in a pan, add a teaspoon panch phoron and whole red chillies. When they start to crackle add the mango slices. Sauté them for a minute. Add two cups of warm water. Add mango seeds. Add sugar or jaggery. Cook them stirring all the time on medium heat till mangoes are cooked and the consistency is thick. Remove mango seeds and discard. Add salt. Roast the remaining panch phoron on a tawa and grind it to a powder. When the chutney is cool sprinkle this powder on top and serve.
