Ingredients list for Panch Phoron Crusted Basa with Saffron Rice
- 2 cups Paanch phoran
- 2 Basa fillets
- a few strands Saffron (kesar)
- 1½ cups Basmati rice parboiled
- 2 teaspoons Red chilli powder
- ½ teaspoon Turmeric powder
- to taste Salt
- for shallow frying Olive oil A few drops +
Method
- Take fish fillets on a plate. Add red chilli powder, turmeric powder, salt and few drops olive oil. Mix well and set aside to marinate for 5 minutes.
- Heat sufficient water in a deep non-stick pan. Add saffron and mix well.
- Add rice and salt, mix well, cover and cook till the rice is fully done.
- Crust both sides of the marinated fish fillets with the paanch phoran.
- Heat olive oil in a non-stick pan. Place the crusted fish fillets on it and shallow-fry till evenly done from both sides and the fish is cooked.
- Make a bed of saffron rice on a serving platter. Place the crusted fish fillets on it and serve immediately.
