Ingredients for Panch Phoron Crusted Basa with Saffron Rice Recipe

  • Paanch phoran 2 cups

  • Basa fillets 2

  • Saffron (kesar) a few strands

  • Basmati rice parboiled 1½ cups

  • Red chilli powder 2 teaspoons

  • Turmeric powder ½ teaspoon

  • Salt to taste

  • Olive oil A few drops + for shallow frying

Method

Step 1

Take fish fillets on a plate. Add red chilli powder, turmeric powder, salt and few drops olive oil. Mix well and set aside to marinate for 5 minutes.

Step 2

Heat sufficient water in a deep non-stick pan. Add saffron and mix well.

Step 3

Add rice and salt, mix well, cover and cook till the rice is fully done.

Step 4

Crust both sides of the marinated fish fillets with the paanch phoran.

Step 5

Heat olive oil in a non-stick pan. Place the crusted fish fillets on it and shallow-fry till evenly done from both sides and the fish is cooked.

Step 6

Make a bed of saffron rice on a serving platter. Place the crusted fish fillets on it and serve immediately.
