Ingredients
- 4 medium potatoes, blanched, peeled and mashed
- 2 tablespoons cornflour/cornstarch
- 1 tablespoon coriander seeds, crushed
- ¼ teaspoon red chilli powder
- Salt to taste
- Oil for greasing + for shallow frying
- Green chutney to serve
- Sweet tamarind chutney to serve
- Chaat masala powder as required
Method
- Take mashed potatoes in a bowl, add cornflour, coriander seeds, red chilli powder and salt and mix well. Grease your palms with oil, divide the mixture into 4 equal portions, and shape each of them into a tikki.
- Heat sufficient oil in a non-stick pan, place the tikkis in it and shallow-fry on medium heat, turning sides and pressing lightly, till evenly golden crisp on both sides. Drain on absorbent paper.
- Place each bhalla on individual serving plates and crush them lightly. Drizzle green chutney and sweet tamarind chutney and sprinkle chaat masala powder. Serve immediately.
