Aloo Bhalle

Ingredients 

  • 4 medium potatoes, blanched, peeled and mashed
  • 2 tablespoons cornflour/cornstarch
  • 1 tablespoon coriander seeds, crushed
  • ¼ teaspoon red chilli powder
  • Salt to taste
  • Oil for greasing + for shallow frying
  • Green chutney to serve
  • Sweet tamarind chutney to serve
  • Chaat masala powder as required

Method

  1. Take mashed potatoes in a bowl, add cornflour, coriander seeds, red chilli powder and salt and mix well. Grease your palms with oil, divide the mixture into 4 equal portions, and shape each of them into a tikki.
  2. Heat sufficient oil in a non-stick pan, place the tikkis in it and shallow-fry on medium heat, turning sides and pressing lightly, till evenly golden crisp on both sides. Drain on absorbent paper.
  3. Place each bhalla on individual serving plates and crush them lightly. Drizzle green chutney and sweet tamarind chutney and sprinkle chaat masala powder. Serve immediately.
