Ingredients list for Achari Paneer Rice
- 2 tablespoons Lemon pickle
- 200 grams Paneer (cottage cheese) cut into small cubes
- 3 cups Rice
- 1 tablespoon Oil
- 1 teaspoon Cumin seeds
- 2 Bay leaves
- 7-8 Black peppercorns
- to taste Salt
- ½ medium Green capsicum finely chopped
- ½ medium Red capsicum finely chopped
- ½ medium Yellow capsicum finely chopped
- for garnishing Fresh coriander sprigs
Method
- Heat oil in a non-stick pan. Add cumin seeds and sauté for half a minute. Add bay leaves and peppercorns and mix.
- Add lemon pickle, mix and sauté. Add salt, rice, green, red, yellow capsicums and cottage cheese cubes and toss well. Cover and cook on low heat for 2-3 minutes.
- Garnish with coriander sprig and serve hot.
