Ingredients
- Chilli oil
- 1 cup dried red chilli flakes
- 1 cup oil
- ¼ cup white sesame seeds
- Green onion oil
- 1 cup oil
- 3-4 spring onions with greens
- Burnt garlic oil
- 1 cup oil
- 1 cup finely chopped garlic
Method
- To make chilli oil, take red chilli flakes in a large plate.
- Heat oil in a wok till it is heated up well.
- Meanwhile, mix white sesame seeds with the chilli flakes. Pour the hot oil over this and mix well. Set aside for a few minutes. Strain it through a strainer lined with a muslin cloth into a bowl. Allow to cool completely. Transfer into an air tight container and use as required.
- To make green onion oil, heat oil in another wok.
- Roughly chop spring onions with the greens and add to the hot oil and mix well. Cook for 1-2 minutes. Switch the heat off and transfer into a bowl. Set aside for 24 hours. Strain through a strainer into another bowl and transfer into an air tight container and use as required.
- To make burnt garlic oil, heat oil in another wok. Add garlic, mix and fry till they turn golden brown and crisp. Drain the oil through a strainer lined with muslin cloth into a bowl.
- Transfer the browed garlic onto absorbent paper. Use it as burnt garlic for any recipe of your choice.
- Allow the oil to cool completely, transfer into an air tight container and use as required.
