3 Types Of Oil

Method

  1. To make chilli oil, take red chilli flakes in a large plate.
  2. Heat oil in a wok till it is heated up well.
  3. Meanwhile, mix white sesame seeds with the chilli flakes. Pour the hot oil over this and mix well. Set aside for a few minutes. Strain it through a strainer lined with a muslin cloth into a bowl. Allow to cool completely. Transfer into an air tight container and use as required.
  4. To make green onion oil, heat oil in another wok.
  5. Roughly chop spring onions with the greens and add to the hot oil and mix well. Cook for 1-2 minutes. Switch the heat off and transfer into a bowl. Set aside for 24 hours. Strain through a strainer into another bowl and transfer into an air tight container and use as required.
  6. To make burnt garlic oil, heat oil in another wok. Add garlic, mix and fry till they turn golden brown and crisp. Drain the oil through a strainer lined with muslin cloth into a bowl. 
  7. Transfer the browed garlic onto absorbent paper. Use it as burnt garlic for any recipe of your choice.
  8. Allow the oil to cool completely, transfer into an air tight container and use as required.
