You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for White Egg Curry Recipe

  • Eggs hard boiled and peeled 4

  • Butter 1 tablespoon

  • Oil 1 tablespoon

  • Medium onion ground 2

  • Milk 3 cups

  • Salt to taste

  • Black peppercorns crushed to taste

  • Sugar 1 teaspoon

  • Fresh mint sprig to garnish


Step 1

Heat butter and oil in a non-stick pan. When butter melts, add onion paste and sauté, on medium heat, till onion turns golden.

Step 2

Add milk and mix well. Add salt and crushed black peppercorns, mix and cook, stirring continuously, till the mixture comes to a boil. Cook further till it reduces slightly.

Step 3

Halve the eggs vertically and add and mix gently. Add sugar, mix gently, reduce heat and simmer for 5 minutes.

Step 4

Transfer into a serving bowl, garnish with mint sprig and serve hot.
