Ingredients list for Vegetable Stewed Rice-SK Khazana

  • 6-8 Button mushrooms quartered
  • 4-5 French beans blanched and cut into 1/2 inch pieces
  • 3-4 Baby corn blanched and diagonally sliced
  • 8-10 Broccoli florets blanched
  • 1 Medium carrot peeled, blanched and sliced
  • 1 Medium green capsicum cut into square pieces
  • to serve Rice steamed
  • 1 tablespoon Oil
  • 1 to cook Garlic finely chopped
  • to taste Salt
  • 1 tablespoon Cornflour slurry
  • for garnish Spring onions sliced

Method

  1. Heat oil in a non-stick pan. Add garlic and sauté well. Add mushrooms and mix well.
  2. Add French beans, baby corn, 1 cup water and salt, mix and bring to a boil.
  3. Add broccoli florets, carrot and capsicum and mix. Add cornflour slurry, mix well and bring to a boil.
  4. Take steamed rice in a serving bowl, top with stewed vegetables, garnish with spring onion greens and serve hot.
