Ingredients list for Vegetable Pilaf - SK Khazana

  • 1/4 cup Carrots finely chopped
  • 1/2 cup Cauliflower florets boiled with turmeric powder
  • 2 tablespoons French beans finely chopped
  • 1 1/2 cups Basmati rice soaked for 15 minutes and drained
  • 1 tablespoon Olive oil
  • 2 tablespoons Butter
  • 1 Bay leaf
  • 10-12 Black peppercorns
  • 1 tablespoon Garlic finely chopped
  • 1 Medium onion finely chopped
  • 6-8 Walnut kernels
  • 1 tablespoon Fresh parsley finely chopped
  • to taste Salt
  • 1 to garnish Fresh parsley sprig

Method

  1. Heat olive oil and butter in a deep non-stick pan, add bay leaf, peppercorns, garlic and onions and sauté till translucent and fragrant.
  2. Add carrots, cauliflower and French beans, mix and cook for 2-3 minutes.
  3. Add rice, 3 cups water, walnuts, parsley and salt, mix well, cover and cook till fully done.
  4. Transfer into a serving bowl, garnish with parsley sprig and serve hot.
