French cuisine consists of cooking traditions and practices from France. French cuisine was codified in the 20th century as the modern haute cuisine. Knowledge of French cooking has contributed significantly to Western cuisines and its criteria are used widely in Western cookery school boards and culinary education. 
French regional cuisine is characterized by its extreme diversity and style. Traditionally, each region of France has its own distinctive cuisine.

Ingredients for Vegetable Creole Curry Recipe

  • Drumstick leaves 2 cups

  • Long brinjals , peeled and cut into small cubes 3-4

  • Oil 2 tablespoons

  • Turmeric powder 1 teaspoon

  • Curry powder 1 teaspoon

  • Cumin seeds ½ teaspoon

  • Curry leaves 10

  • Fresh bay leaf 1

  • cloves , crushed 5-6

  • Coconut milk , thick 2 cups

  • Ginger-garlic , chopped 1 teaspoon

  • Fresh yellow chilli 1

  • Salt to taste

  • Black pepper powder to taste

Method

Step 1

Heat oil in a pan, add brinjal and saute. Add turmeric powder and curry powder and saute.

Step 2

Heat water in another pan, add drumstick leaves. Turn off heat, remove excess water and set the leaves aside.

Step 3

Add cumin seeds, curry leaves, bay leaf and cloves to the first pan and mix.

Step 4

Add coconut milk, mix and let the mixture simmer.

Step 5

Squeeze out excess water from the drumstick leaves and chop them.

Step 6

Add ginger-garlic and mix. Chop yellow chilli, add to the pan and mix well. Add drumstick leaves and mix well.

Step 7

Switch off the heat, add salt and pepper powder and mix.

Step 8

Transfer into a serving bowl and serve hot.
