Hindi: baingan
Also called by names like aubergine and eggplant, this purple hued fleshy vegetable is a versatile thing and fun to cook with. Dish-up a very traditional bharta with it, bake a lasagna with parmesan and eggplant or just fry it for a great accompaniment with dal-chawal, brinjal is versatile. To choose one without seeds, pick the lighter one with a smooth shiny skin.

Ingredients for Vangyache Bharit Recipe

  • Brinjal roasted, peeled and mashed 1 large

  • Onion chopped 1 medium

  • Jaggery (gur) grated 1 tablespoon

  • Tamarind pulp ½ teaspoon

  • Green chilli chopped 1

  • Salt to taste

  • Scraped coconut fresh 2 tablespoons

  • Fresh coriander leaves chopped 1 tablespoon


Step 1

Put brinjal, onion, jaggery, tamarind pulp, green chilli, salt, coconut and coriander leaves in a bowl and mix well.

Step 2

Serve immediately.
