Turkish cuisine is largely based on Ottoman cuisine, which in turn borrowed many elements from Greek, Central Asian, Caucasian, Sephardi Jewish cuisine, Middle Eastern and Balkan cuisines. Turkish cuisine in turn influenced these as well as other cuisines of  neighbouring countries, including those of Central and Western Europe.

Ingredients for Turkish Pizza Recipe

  • Refined flour (maida) 2 cups + f

  • Fresh yeast 1½ teaspoon

  • Castor sugar (caster sugar) ½ teaspoon

  • Eggs 2

  • Yogurt ½ cup

  • Salt to taste

  • white onion 1

  • oil 1 tbsp + f

  • Garlic finely chopped 1 tablespoon

  • Green chilli 1

  • Minced mutton 1 cup

  • Green capsicum 1

  • Red capsicum 1

  • Red chilli powder 1 teaspoon

  • All spice powder ½ teaspoon

  • Tomato puree ¼ cup

  • Mozzarella cheese 50 grams


Step 1

Mix yeast, sugar and 2 tbsps warm water in a bowl and set aside to froth.

Step 2

Put refined flour in a bowl, break one egg and add along with yogurt, activated yeast and salt and mix well. Add ¾ cup water and knead into medium-soft dough. Set aside to rise.

Step 3

Preheat oven to 180º C. Finely chop onion.

Step 4

Heat oil in a non-stick pan, add onion and garlic and sauté till lightly browned.

Step 5

Finely chop green chilli and add to the pan and sauté further for half a minute.

Step 6

Add minced mutton and mix well. Add ¼ cup water and mix well. Cover and cook for 2-3 minutes.

Step 7

Cut green and red capsicums into small pieces.

Step 8

Add capsicum pieces to the pan and mix well. Add salt and mix well. Cover and cook for 3-4 minutes.

Step 9

Add red chilli powder, all spice powder and tomato puree and mix well. Cover and cook till the mutton is fully cooked. Transfer into a bowl.

Step 10

Dust worktop with refined flour, place the dough on it and roll out into a thick oblong sheet.

Step 11

Grease a baking tray with oil and place oblong sheet on it.

Step 12

Break the remaining egg into a bowl and whisk well. Grate mozzarella cheese into another bowl.

Step 13

Spread mutton mixture on the oblong sheet, fold the edges inwards and join them at the ends. Top with grated mozzarella cheese. Brush the sides on the oblong sheet with whisked egg.
