Ingredients list for Tamarind Glazed Honey Shrimp

  • 1 tablespoon Sweet tamarind chutney
  • 450 grams Prawns peeled and deveined
  • 1 tablespoon Honey
  • to taste Salt
  • 1 tablespoon Lemon juice
  • 1/2 teaspoon Red chilli flakes optional
  • 1/2 teaspoon Coriander seeds crushed
  • 1/2 inch piece Ginger grated
  • 2 tablespoons Oil
  • a few Iceberg lettuce leaves

Method

  1. Place the prawns in a bowl.
  2. Add salt, lemon juice, crushed red chillies, crushed coriander seeds, ginger, sweet tamarind chutney and honey and mix well.
  3. Cover the bowl and keep it in the refrigerator till it is time to serve.
  4. Heat oil in a non stick pan. Shred lettuce and put them in stemmed glasses. Add the marinated prawns to the oil in the pan and cook, stirring, till the prawns are done.
  5. Drain and place the prawns over the lettuce and serve hot immediately.
