Sweet Potato Stir Fry Grated sweet potatoes stir fried in ghee with cashewnuts, coconut and seasonings By Sanjeev Kapoor 23 Aug 2016 in Recipes Course New Update Main Ingredients Sweet potat, Ghee Cuisine Punjabi Course Main Course Vegetarian Prep Time 6-10 minutes Cook time 16-20 minutes Serve 3 Taste Sweet Level of Cooking Moderate Others Veg Ingredients list for Sweet Potato Stir Fry 1 cup Sweet potat grated 2 tablespoons Ghee 1 teaspoon Cumin seeds 2 Green chilli finely chopped 8-10 Cashewnuts 4 tablespoons Coconut grated 1 teaspoon Sugar to taste Salt Method Heat ghee in a non stick kadai , add cumin seeds and when it splutters add green chillies and cashew nuts and saute for a minute. Add the grated sweet potatoes and sauté for a minute. Add grated coconut, sugar, salt and cook till potatoes are cooked.
