Sweet Potato Stir Fry

Grated sweet potatoes stir fried in ghee with cashew nuts, green chillies, coconut and seasonings. This is Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 cup grated sweet potatoes 
  • 2 tablespoons ghee
  • 1 teaspoon cumin seeds
  • 2 green chillies, finely chopped
  • 8-10 cashewnuts
  • 4 tablespoons grated coconut 
  • 1 teaspoon sugar
  • Salt to taste

Method

  1. Heat ghee in a non stick kadai , add cumin seeds and when it splutters add green chillies and cashew nuts and saute for a minute.
  2. Add the grated sweet potatoes and sauté for a minute. Add grated coconut, sugar, salt and cook till potatoes are cooked.
  3. Serve hot.
