Ingredients list for Sweet Chilli Chicken

  • 6 teaspoons Sweet Chilli Sauce
  • 600 grams Boneless Chicken cut into 1 inch pieces
  • 1 tablespoon Fish sauce
  • 2-3 tablespoons Oil
  • 2-3 cloves Garlic
  • 1 tablespoon Ginger finely chopped
  • 2-3 Fresh red chillies
  • 2 tablespoons Tomato ketchup
  • 1/4 cup Chicken stock
  • 7-8 Fresh coriander sprigs
  • 1 Egg

Method

  1. Add fish sauce to the chicken, mix and set aside for 10-15 minutes.
  2. Heat oil in a non-stick pan. Crush garlic cloves through a press and add along with ginger, mix and sauté for 1 minute. Add chicken and mix well.
  3. Diagonally slice fresh red chillies and add. Toss to mix and cook for 2 minutes.
  4. Add sweet chilli sauce and mix well. Add tomato ketchup and mix again. Add chicken stock and mix. Cook till the sauce thickens and the chicken is done.
  5. Chop coriander leaves. Break egg into a bowl and whisk well. Add to the chicken in the pan and keep stirring. Add coriander leaves and mix well. Cook for ½ minute.
  6. Serve hot.
