Ingredients list for Spinach Parmesan Muffin
- 100 grams Spinach blanched and chopped
- 1/4 cup Parmesan cheese powder
- 2 cups Refined flour (maida)
- 1/2 teaspoon Salt
- 1 tablespoon Baking powder
- 1 teaspoon Castor sugar (caster sugar)
- 1 Egg
- + 2 tablespoons Milk 1 cup
- 1/2 cup Oil
Method
- Preheat oven to 180º C. Line a silicon muffin tray with muffin cases.
- Cream together egg, olive oil and milk in a bowl till light.
- Sieve together flour, baking powder and salt into the egg mixture. Fold in well.
- Add spinach, ⅔ of the parmesan cheese powder and castor sugar and mix well.
- Spoon the mixture into the moulds till ¾ full. Place the tray on a baking tray and place it in the preheated oven and bake for 20-25 minutes.
- Remove from oven, demould and top with the remaining parmesan cheese powder. Serve immediately.
