Treasure house of vitamins and minerals, spinach must be included in the week's menu. The usage can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with rotis, a few spinach leaves thrown in with mixed vegetables and turned into a soup is lovely on a cold winter night, chopped and blanched spinach makes a different sort of raita, spinach puree can be used in cutlets or kababs, the list goes on.

Ingredients for Spinach And Cheese Crackers Recipe

  • Spinach 1 bunch

  • Cream Crackers 10-12

  • Cheese grated 1 cup

  • Butter 1 tablespoon

  • Onion finely chopped 1 medium

  • Garlic finely chopped 2-3 cloves

  • Salt to taste

  • Dry oregano a pinch

Method

Step 1

Blanch spinach in sufficient boiling water for two minutes. Drain, refresh, and chop finely. Heat butter in a thick-bottomed pan. Add onion and sauté till light pink.

Step 2

Add garlic and continue to sauté for a minute. Add chopped spinach and salt and sauté on medium heat for two minutes till all the water has evaporated. Add dried oregano and half of the grated cheese, mix well and continue to cook on low heat for a minute.

Step 3

Remove from heat and allow to cool. Preheat oven to 180ºC. When spinach mixture is cooled, take a spoonful of it and spread evenly on a cream cracker. Sprinkle some grated cheese and keep aside.

Step 4

Similarly prepare the remaining biscuits and arrange on a baking tray. Place baking tray in the preheated oven and gratinate the crackers at 180ºC till cheese melts. Serve hot.
