Ingredients list for Spicy Chicken Fried Rice With Crispy Basil Leaves
- 200 grams Chicken mince
- 2 1/2 cups Rice
- 1/2 cup Fresh basil leaves
- 3 Fresh red chillies
- 2 Green chilli
- 7-8 cloves Garlic
- to taste Salt
- 3 tablespoons Oil
- 1 teaspoon Fish sauce
- 1 teaspoon Sugar
- 1 Hard boiled eggs
Method
- Pound two red and one green chillies with the garlic and salt in a mortar and pestle. Cut the remaining red and green chilli into thin diagonal slices.
- Heat the oil in a non stick wok; add the basil and fry till crisp. Drain and set aside. Add the chilli-garlic mixture to the same oil and sauté until fragrant. Add the minced chicken and stir-fry for three to four minutes.
- Add the rice and toss to mix well. Add the fish sauce, salt and sugar and continue to stir-fry for a minute. Add a little water and cook till the rice is heated through.
- Add the red and green chilli slices and mix thoroughly. Halve the egg vertically and further slice each half into three pieces vertically. Transfer the rice onto a serving plate, place the egg slices over and top with crisp basil leaves. Serve immediately.
