Ingredients list for Sambal Udang
- 400 grams Jumbo prawns peeled, deveined and tail intact
- to taste Salt
- 2 tablespoons Oil
- 2 small Potatoes peeled, cut into wedges and boiled
- 2 cups Coconut milk
- 1 tablespoon Tamarind pulp
- Spice paste
- 6-8 Shallots
- 5-7 Garlic cloves
- 4 Fresh red chillies
- 1/2 teaspoon Shrimp paste
Method
- Boil three cups water in a deep non-pan, add salt and prawns. Cook for three to four minutes. Drain and set aside.
- Grind together shallots, garlic, red chillies and shrimp paste to a smooth paste.
- Heat oil in another non-stick pan, add the ground paste and sauté for a minute.
- Add potatoes and prawns and mix well. Add coconut milk and bring to a boil. Add salt and tamarind pulp and mix well. Simmer for two minutes.
- Transfer into a serving bowl and serve hot.
