Ingredients list for Quinoa and Vegetable Patties
- ½ cup Quinoa roasted
 - 2 large Potatoes boiled, peeled and mashed
 - 2 Garlic cloves minced
 - 1 small Carrot peeled and grated
 - 2 Spring onions with greens chopped
 - 1 cup Fresh spinach leaves (palak) chopped
 - 1 teaspoon Mixed herbs
 - to taste Salt
 - to taste Crushed black peppercorns
 - ¼ cup Parmesan cheese
 - ¼ cup Cornflour/ corn starch
 - to deep fry Olive oil
 
Method
- Combine the potatoes, garlic, carrot, spring onion with greens, spinach, mixed herbs, salt and crushed peppercorns in a bowl and mix well. Add the parmesan cheese and mix well.
 - Take the cornstarch in a bowl. Add some water and mix to make a smooth slurry.
 - Divide the prepared vegetable mixture into eight equal portions and shape them into patties.
 - Dip the patties in the slurry and coat with the quinoa.
 - Heat some oil in a non-stick pan. Place the prepared patties on it and shallow-fry till evenly done and golden from both sides.
 - Serve hot with tomato ketchup.
