Ingredients list for Plum Chilli Roast Chicken
- 1 tablespoon Chicken
- 5-6 Plum jam seeded
- 1 Chicken whole with skin
- to taste Sea salt
- 1 inch piece Ginger
- 7-8 clove Garlic
- 8 medium Carrot cut into large piece
- 8 medium Potato cut into large piece
- 1 tablespoon Butter
- 2 tablespoon Oil
Method
- Rub the sea salt inside and all over the outside of the chicken. Grind red chillies with ginger and garlic to a fine paste. Rub this paste inside and all over the outside of the chicken. Let it marinate for fifteen minutes to half an hour.
- Preheat the oven or broiler to 180°C.
- Keep the potatoes and carrots in the boiler. Place the chicken over the vegetables and cook for about forty five minutes. If cooking in a normal oven, layer the potatoes and carrots in a baking tray, place the chicken over them and cook.
- Mix way through drizzle some oil and brush with a little butter and continue to cook till the chicken is fully cooked. Mix plum jam with a little of the remaining chilli paste and spread over the chicken. Sprinkle a little sea salt over the vegetables.
- Cut the chicken into bite size pieces and serve hot with the vegetables.
