By Sanjeev Kapoor 04 May 2021 in Recipes Course New Update Main Ingredients Penne pasta, Olive oil Cuisine Italian Course Main Course Vegetarian Prep Time 16-20 minutes Cook time 11-15 minutes Serve 4 Taste Spicy Level of Cooking Moderate Others Veg Ingredients list for Penne Arrabiata 2 cups Penne pasta , boiled 1 tablespoon Olive oil 2 tablespoons Garlic , chopped 1 medium Onion , finely chopped 1 1/2 cups Tomato concasse to taste Salt to taste Crushed black peppercorns 1 teaspoon Red chilli flakes a pinch Castor sugar 3-4 Basil leaves 4-5 Black olives , pitted and sliced 10 grams Parmesan cheese to garnish Fresh basil sprig to serve Garlic bread slices Method Heat olive oil in a non-stick pan, add garlic and onion, mix and sauté till onion turns a light brown and raw smells disappear. Add tomato concasse, mix and sautefor 1 minute. Add salt, mix and saute for 1-2 minutes. Add pasta, crushed peppercorns and chilli flakes, mix and cook for 1 minute. Add castor sugar and adjust salt, mix and cook for 1-2 minutes. Tear basil leaves and add and mix well. Transfer thepasta into a serving bowl. Put black olive slices and garnish with parmesan shavings and basil sprig.
