Paneer Corn Bread Pakoda

Spiced paneer and corn filling sandwiched between bread, dipped in gram flour batter, and deep-fried to golden perfection—served hot with tangy tomato ketchup. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 2 cups cottage cheese (paneer), grated
  • 1 cup of corn kernels boiled
  • 8 white bread slices
  • Ready-made gram flour (besan) batter as required
  • 1 tablespoon oil
  • 2 teaspoons garlic paste
  • ½ teaspoon turmeric powder
  • ½ teaspoon asafoetida
  • 2 green chillies, chopped
  • Salt to taste
  • Oil to deep fry

Method

  1. Heat 1 tablespoon of oil in a non-stick pan, add garlic paste and sauté for 30 seconds.
  2. Add corn kernels, mix and sauté for 1-2 minutes. Add turmeric powder, asafoetida powder, green chillies and salt, mix well and sauté for 2 minutes.
  3. Add cottage cheese, mix and cook for 1-2 minutes. Remove from heat and set aside to cool.
  4. Top 4 bread slices with a generous portion of cottage cheese mixture, and cover with remaining bread slices.
  5. Heat sufficient oil in a kadai.
  6. Cut each sandwich into triangles, dip in gram batter and deep-fry in hot oil till golden brown. Drain on absorbent paper.
  7. Arrange them on a serving platter and serve hot with tomato ketchup.
