The usage can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with rotis, a few spinach leaves thrown in with mixed vegetables and turned into a soup is lovely on a cold winter night, chopped and blanched spinach makes a different sort of raita, spinach puree can be used in cutlets or kababs, the list goes on.

Ingredients for Palak Paneer Seekh Kabab Recipe

  • Spinach leaves (palak) blanched and chopped 1 cup

  • Paneer (cottage cheese) grated ½ cup

  • Oil 1 tablespoon

  • Cumin seeds ½ teaspoon

  • Green chillies finely chopped 1-2

  • Garlic chopped 1 teaspoon

  • Cornflour/ corn starch 2 tablespoons

  • Oats 2-3 tablespoons

  • Ghee for shallow frying


Step 1

Heat oil in a non-stick pan. Add cumin seeds and sauté for 30 seconds.

Step 2

Add green chillies, mix and sauté for 15 seconds. Add garlic and sauté for a minute.

Step 3

Add spinach, mix and sauté. Add salt and mix well. Transfer into a bowl and cool.

Step 4

Add cottage cheese, cornflour and oats and mix well.

Step 5

Divide the prepared mixture into equal portions and wrap them around 2 skewers to prepare kababs.

Step 6

Heat some ghee on a non-stick tawa. Place the prepared kababs on it and shallow-fry till fully done and golden from all sides.

Step 7

Serve hot.
