Ingredients for Olive Upma Recipe

  • Black olives sliced 10-12

  • Semolina 1 cup

  • Extra virgin olive oil 3 tablespoons

  • Mustard seeds ¼ teaspoon

  • Curry leaves 5-6

  • Onion chopped 1 large

  • Green chillies chopped 3-4

  • Salt to taste

Method

Step 1

Heat extra virgin olive oil in a non-stick pan. Add mustard seeds and curry leaves. When the seeds splutter, add onion and sauté till lightly coloured.

Step 2

Add semolina and mix well. Add green chillies and mix. Add two and a half cups of water, salt to taste and mix.

Step 3

Add the olives and mix. Reduce heat, cover and cook till all the water is absorbed. Take it off the heat.

Step 4

For serving you can pack the upma in small moulds and un-mould them on serving plates and serve hot.
