Coastal cuisine of India loves the coconut. Be it Goan or Malwani, Karnatak, Tamilian or from Kerala, the taste of coconut reigns supreme. Think about a rich fish curry and try making it obliterating the coconut! It will pass off as a fake. Very correctly termed as the ‘plant of life,’ each and every part of the coconut plant is useful in one or the other way.

Ingredients for Nariyal Puri Recipe

  • Fresh coconut scraped 1 cup

  • Refined flour (maida) 2 cups

  • Semolina (suji) ¼ cup

  • Oil for deep-frying

  • Salt to taste

  • Carom seeds (ajwain) 1 teaspoon

  • Fresh coriander leaves chopped 4 tablespoons

  • Green chillies finely chopped 2


Step 1

Heat sufficient oil in a kadai.

Step 2

Combine refined flour, semolina, salt and 2 tablespoons hot oil in a bowl. Mix well, add carom seeds and knead into a hard dough using water as required. Set aside for 20-25 minutes.

Step 3

Take coconut in a bowl. Add chopped coriander, green chillies and salt and mix well.

Step 4

Divide the dough into equal portions. Roll out into small discs. Make a dent in the centre, place a portion of the coconut mixture in it, bring together the edges and pinch to seal. Roll out into small puris.

Step 5

Deep-fry puris in hot oil till golden and crisp. Drain on absorbent paper.

Step 6

Serve hot.
