Treasure house of vitamins and minerals, spinach must be included in the week's menu. The usage can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with rotis, a few spinach leaves thrown in with mixed vegetables and turned into a soup is lovely on a cold winter night, chopped and blanched spinach makes a different sort of raita, spinach puree can be used in cutlets or kababs, the list goes on.

Ingredients for Missi Roti Palakwali Recipe

  • Spinach puree 1/4 cup

  • Gram flour 2 cups

  • Oil 2 tablespo for brushing

  • Onion medium 1

  • Whole wheat flour 3/4 cup +for dusting

  • Green chillies finely chopped 1 teaspoon

  • Salt to taste

  • Chaat masala 1 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Butter for basting


Step 1

Heat a Gas Oven Tandoor (GOT) and brush with some oil.

Step 2

Finely chop onion and put in a bowl. Add gram flour, wheat flour, green chillies, salt, chaat masala and turmeric powder and mix well. Add spinach puree and 2 tablespoons oil and mix. Add sufficient water and knead into a soft dough.

Step 3

Divide the dough into equal portions and shape them into balls. Dust them with wheat flour.

Step 4

Grease one palm with oil and another with water and spread the balls into medium sized rotis.

Step 5

Place the rotis in the Gas Oven Tandoor (GOT), keeping the wet part facing down, cover and cook till the underside is done. Flip, and cook till the other side is similarly done.

Step 6

Uncover, baste with butter and serve hot.
