Ingredients list for Mango Coriander Chicken
- 1 large Ripe mango peeled and cut into cubes
- ½ cup Fresh coriander leaves roughly chopped
- 4 medium Boneless chicken breasts
- 2 medium Onions roughly chopped
- 1 inch piece Ginger roughly chopped
- 5-6 Garlic cloves roughly chopped
- ½ cup Coconut milk
- 1 tablespoon Oil
- 2 teaspoons Lemon juice
- 2 teaspoons brown sugar/jaggery
- to taste Salt
Method
- Blend together the mango, coriander leaves, onions, ginger, garlic, coconut milk, oil, lemon juice, brown sugar and salt to a thick paste.
- Transfer the paste in a bowl and add the chicken breasts. Rub well and set aside to marinate for four to six hours.
- Preheat the oven to 180°C.
- Heat oil in a non-stick grill pan. Place the chicken breasts and cook till grill marks appear on both the sides.
- Place the breasts on a greased baking tray and cover with an aluminium foil. Put the tray in the preheated oven and bake for ten to twelve minutes.
- Serve hot.
