History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Lychee Phirni Recipe

  • Canned lychee chopped 25-30

  • Rice 1 1/2 cup

  • Basmati rice soaked and ground 3 tablespoons

  • Milk 1/2 litre

  • Sugar 3 tablespoons

  • Green cardamom powder 1/4 teaspoon

  • Khoya/mawa grated 1/2 cup

  • Rose water 1/2 teaspoon

  • Almonds blanched and sliced 10-12

  • Pistachios blanched and sliced 10-12


Step 1

Mix together milk and lychee in handi. Add ground rice and mix. Add sugar and mix. Add green cardamom powder and mix well.

Step 2

Add khoya, rose water and mix well. Turn off the heat and let it cool.

Step 3

Once it cools, transfer into serving bowl. Garnish with lychees, almonds, pistachios and serve.
