Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Hot And Sour Soup Recipe

  • Fresh button mushrooms finely chopped 4

  • French beans 4-6

  • celery stalk 2-inch

  • Spring onion bulbs finely chopped 1 small

  • Oil 1 tablespoon

  • Carrot grated 1/2 medium

  • Ginger chopped 1 inch piece

  • Garlic finely chopped 2-3 cloves

  • Cabbage finely chopped 1/4 medium

  • Green chilli Sauce 2 tablespoons

  • Sugar 1/2 teaspoon

  • Vegetable stock 5 cups

  • Soy sauce 2 tablespoons

  • Salt to taste

  • White pepper powder 1/2 teaspoon

  • Cornflour/ corn starch 3 ttablespoons

  • Spring onion greens finely Chopped 1 stalks

  • Green capsicum finely Chopped 1/2 medium

  • White Vinegar 1 tablespoons

Method

Step 1

Slice mushrooms, string beans and chop finely. Chop celery stem.

Step 2

Heat oil in a non stick wok, add onion, ginger and garlic and sauté till transluscent. Add celery, French beans, mushrooms, carrot and cabbage and sauté for 2-3 minutes.

Step 3

Add soy sauce, green chilli sauce and mix well. Add 4½ cups stock, salt, pepper powder and sugar and mix.

Step 4

Mix cornflour in ½ cup stock and add to the soup and mix well.

Step 5

Add capsicum and mix. Chop spring onion greens and add. Add vinegar and mix and switch off the heat.
