Ingredients list for Grilled Vegetables In Greek Style
- 2 Small brinjals halved lenghtwise
- 115 grams Feta cheese cut into small cubes
- 1 medium Red capsicum seeded and quartered
- 1 medium Yellow capsicum seeded and quartered
- 4 small Zucchinis halved lenghtwise
- 1 tablespoon Lemon juice
- to taste Salt
- to taste Black peppercorns freshly ground
- Marinade
- 5 tablespoons Olive oil
- 2 cloves Garlic crushed
- 1 teaspoon Fresh parsley chopped
- 1 teaspoon Fresh mint leaves chopped
- 1 teaspoon Fresh oregano chopped
Method
- To make the marinade, combine olive oil, garlic, parsley, mint and oregano in a bowl. Mix well.
- Add the cheese and vegetables and mix gently so that they are well coated. Set aside for one hour.
- Heat the Grill Pan. Place only the marinated vegetables in it and cook for ten minutes or till tender, turning every few minutes.
- Transfer grilled vegetables onto a serving plate.
- Drizzle lemon juice and season with salt and pepper.
- Sprinkle the feta over feta and serve.
