By Sanjeev Kapoor 15 Jun 2016 in Recipes Course New Update Main Ingredients Small brinjals, Feta cheese Cuisine Greek Course Snacks and Starters Prep Time 1.30-2 hour Cook time 16-20 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Advertisment Ingredients list for Grilled Vegetables In Greek Style 2 Small brinjals halved lenghtwise 115 grams Feta cheese cut into small cubes 1 medium Red capsicum seeded and quartered 1 medium Yellow capsicum seeded and quartered 4 small Zucchinis halved lenghtwise 1 tablespoon Lemon juice to taste Salt to taste Black peppercorns freshly ground Marinade 5 tablespoons Olive oil 2 cloves Garlic crushed 1 teaspoon Fresh parsley chopped 1 teaspoon Fresh mint leaves chopped 1 teaspoon Fresh oregano chopped Method Advertisment To make the marinade, combine olive oil, garlic, parsley, mint and oregano in a bowl. Mix well. Add the cheese and vegetables and mix gently so that they are well coated. Set aside for one hour. Heat the Grill Pan. Place only the marinated vegetables in it and cook for ten minutes or till tender, turning every few minutes. Transfer grilled vegetables onto a serving plate. Drizzle lemon juice and season with salt and pepper. Sprinkle the feta over feta and serve.
