Also called by names like aubergine and eggplant, this purple hued fleshy vegetable is a versatile thing and fun to cook with. Dish-up a very traditional bharta with it, bake a lasagna with parmesan and eggplant or just fry it for a great accompaniment with dal-chawal, brinjal is versatile. To choose one without seeds, pick the lighter one with a smooth shiny skin.

Ingredients for Grilled Vegetables In Greek Style Recipe

  • Small brinjals halved lenghtwise 2

  • Feta cheese cut into small cubes 115 grams

  • Red capsicum seeded and quartered 1 medium

  • Yellow capsicum seeded and quartered 1 medium

  • Zucchinis halved lenghtwise 4 small

  • Lemon juice 1 tablespoon

  • Salt to taste

  • Black peppercorns freshly ground to taste

  • Marinade

  • Olive oil 5 tablespoons

  • Garlic crushed 2 cloves

  • Fresh parsley chopped 1 teaspoon

  • Fresh mint leaves chopped 1 teaspoon

  • Fresh oregano chopped 1 teaspoon

Method

Step 1

To make the marinade, combine olive oil, garlic, parsley, mint and oregano in a bowl. Mix well.

Step 2

Add the cheese and vegetables and mix gently so that they are well coated. Set aside for one hour.

Step 3

Heat the Grill Pan. Place only the marinated vegetables in it and cook for ten minutes or till tender, turning every few minutes.

Step 4

Transfer grilled vegetables onto a serving plate.

Step 5

Drizzle lemon juice and season with salt and pepper.

Step 6

Sprinkle the feta over feta and serve.
