Ingredients
- 2 chicken breasts with skin
- 2-3 tablespoons lemon juice
- 1 lemon
- 4-5 fresh rosemary sprigs
- 4-5 fresh thyme sprigs
- 5-6 fresh oregano sprigs
- 1 teaspoon garlic, finely chopped
- Crushed black peppercorns to taste
- Salt to taste
- 2 tablespoons olive oil
- 1 teaspoon red chilli powder
- Oil for grilling
- Extra-virgin olive oil for drizzling
Method
- Mix rosemary, thyme, oregano, garlic, crushed peppercorns and salt in a bowl. Add 2 tablespoons of olive oil and crush the mixture with a pestle. Add 2-3 tablespoons lemon juice and red chilli powder and mix well.
- Add chicken breasts and rub the mixture thoroughly over them. Set aside to marinate for 4-5 hours.
- Thinly slice 1 lemon. Heat oil in a non-stick grill pan.
- Insert 2 lemon slices under the skin of each marinated chicken breast and place them on the grill pan, and grill. Turn over when the underside is lightly browned.
- Place two bricks covered with aluminium foil on the chicken breasts and grill on high heat till the grill marks appear underside. Flip and place the bricks again on the grilled side and grill till the grill marks appear on the other side too.
- Arrange the grilled lemon chicken on a serving plate, garnish with remaining lemon slices, drizzle extra-virgin olive oil over them and serve hot.
