Ingredients
- 1 medium green apple
- 1 French baguette
- 4 tablespoons olive oil
- 1 medium tomato, finely chopped
- 1 medium onion, finely chopped
- 2 tablespoons fresh coriander leaves, finely chopped
- 1 teaspoon green chillies chopped
- 2 tablespoons lemon juice
- Salt to taste
- Crushed black peppercorns to taste
- A few fresh coriander sprigs to garnish
- A few black olives sliced to garnish
Method
- Preheat the oven to 180° C.
- Cut the French baguette into not-too-thin slices.
- Grease a baking tray with 1 tbsp oil. Place baguette slices on it and drizzle 2 tbsps olive oil over them. Keep the tray in the preheated oven and bake for 5-7 minutes.
- Finely chop the green apple and transfer it in a bowl. Add tomato, onion, coriander leaves, green chillies, lemon juice, salt, crushed black pepper and 1 tbsp oil and mix well.
- Place bread slices on a serving platter and keep a spoonful of salsa on top of each.
- Garnish each slice with a coriander sprig and an olive slice. Serve immediately.
