Ingredients for Garlic And Green Pepper In Brine Recipe

  • Garlic Bread 300 grams

  • Green Peppercorns 100 grams

  • Dill 10 grams

  • Bay leaves 4 grams

  • Salt 120 grams

  • Sugar 70 grams

  • Citric acid 4 grams

  • Cloves 2 grams

  • Vinegar 350 millilitres

Method

Step 1

Blanch garlic in sufficient boiling water for half a minute. Drain, refresh and set aside. When cool place the blanched garlic and green peppercorns at the base of a sterilized glass jar and set aside. In a separate jar combine dill leaves, bay leaves, salt, sugar, citric acid, cloves and vinegar and stir to mix well. Pour the vinegar mixture over the garlic and green peppercorns, seal the jar tight and set aside for three to four days.
