Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Fried Pumpkin Recipe

  • Ash Gourd thickly sliced 3 cups

  • Rice Flour to taste

  • Baking soda 1/4 teaspoon

  • Rice flour 1/2 cup

  • Gram flour (besan) 1/2 cup

  • Turmeric powder a pinch

  • Red chilli powder 1/2 teaspoon

  • Asafoetida 1/2 teaspoon

  • Oil to deep fry


Step 1

In a bowl, combine sliced ash gourd, salt and baking soda. Mix well and set aside for thirty minutes.

Step 2

Drain the excess water and allow the slices to dry.

Step 3

In another bowl, mix rice flour, gram flour, turmeric powder, salt, red chilli powder and asafoetida.

Step 4

Add sufficient water to make a smooth batter.

Step 5

Heat sufficient oil in a kadai.

Step 6

Dip the pumpkin slices in the batter and deep fry till golden brown.

Step 7

Drain on absorbent paper. Serve hot.
