You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Fluffy Omelette Recipe

  • Eggs 8

  • Mushrooms finely chopped 1 cup

  • Onions finely chopped 2 small

  • Tomato finely chopped 1 medium

  • Green chillies finely chopped 2

  • Salt to taste

  • Black pepper powder to taste

  • Butter as required

  • White bread slices to serve

  • Oil 1 teaspoon + for cooking


Step 1

Heat 1 teaspoon oil in anon-stick pan. Add onion and sauté till they turn translucent. Add mushrooms, mix and sauté well.

Step 2

Add tomato, mix and sauté till tomato turns soft. Add green chillies, mix and sauté till the mixture turns dry. Transfer onto a plate and cool to room temperature.

Step 3

Break 2 eggs into a bowl. Add salt, pepper powder and beat well.

Step 4

Heat some oil in the same pan.

Step 5

Add a portion of the cooked mushroom mixture to the eggs, beat again and add to the pan. Scramble a little, bring to a corner and let the egg cook. Roll the omelet and cook for half a minute. Similarly make the remaining omelettes.

Step 6

Serve hot with buttered bread slices.
