Ingredients list for Eggless Choco Coffee Cake

  • 2/3 cup Cocoa powder
  • 1 1/2 teaspoons Instant coffee powder
  • 2 1/4 cups Refined flour (maida)
  • 1 1/2 teaspoons Baking soda
  • 1 1/2 cups Sugar
  • 3/4 cup + to grease Vegetable oil
  • 3/4 teaspoon Salt
  • 3/4 teaspoon Vanilla essence
  • 2 cups Milk
  • 1 1/2 tablespoons Vinegar

Method

  1. Preheat the oven to 180° C.
  2. Sieve cocoa powder into a mixing bowl. Sieve together coffee powder, baking soda and refined flour into the same bowl and mix well.
  3. Add sugar and mix. Add oil and salt and mix. Add vanilla essence and mix well. Add 1½ cups milk and mix well. And vinegar and beat with an electric hand blender. Add ½ cup milk and adjust the consistency of the batter.
  4. Grease a non-stick spring-bottom cake tin with oil and pour the batter into it. Keep the tin in the preheated oven and bake for 35-40 minutes.
  5. Remove the tin from the oven, cool slightly, demold and slice.
  6. Arrange the slices on a serving plate and serve.
