Ingredients list for Dragon Seafood Rolls

  • Refined Flour
  • 1/2 cup Fish fillets
  • 1/4 cup Cornflour/ corn starch
  • 1 pinch Salt
  • 2 Eggs
  • Filling
  • 1 cup Crabmeat roughly chopped
  • 8-10 Shrimps peeled and deveined and chopped
  • 100 grams Fish fillet chopped
  • 1 tbsp + to deep fry Oil
  • 1/2 inch piece Ginger finely chopped
  • 2 cloves Garlic finely chopped
  • 1 Green chilli seeded and chopped
  • 1/2 teaspoon Red chilli paste
  • 1 Spring onion bulb chopped
  • 1/4 teaspoon MSG
  • 1/2 tablespoon Soy sauce
  • 1 tablespoon Vinegar
  • to taste Salt
  • 1/2 cup Bean sprouts
  • Egg whisked

  1. Whisk all the ingredients for the pancake together with enough water to make a smooth batter. Strain and set aside for half an hour. To make the filling, heat one tablespoon oil in a pan, add the ginger, garlic and green chilli stir-fry for half a minute.
  2. Add the red chilli paste and spring onion. Sauté for a minute and add the crabmeat, shrimps and fish fillet. Sprinkle the MSG, soy sauce, vinegar and salt.
  3. Mix well and cook till the filling dries up and starts sizzling. Remove, cool and mix in the bean sprouts. Heat a non-stick pan and brush a little oil. Mix the batter well and pour a ladle full, swirl the pan to coat and pour back the excess batter.
  4. Cook on medium to low heat, till it starts leaving the sides of the pan. Remove the pancake carefully and cool. Repeat and make twelve pancakes. Divide the filling into twelve equal portions.
  5. Place a portion of the filling at lower end of each pancake and roll, while folding the sides along. Brush the edges with egg and seal tightly. Repeat with all the pancakes and keep the rolls ready.
  6. Heat sufficient oil in a wok and deep-fry the prepared rolls in moderately hot oil, turning the rolls frequently until crisp and golden brown in color. Drain on absorbent paper. Serve hot with a dipping sauce of your choice.
