By Sanjeev Kapoor 07 Aug 2014 in Recipes Course New Update Main Ingredients Zucchini, Oil Cuisine Continental Course Main Course Vegetarian Prep Time 6-10 minutes Cook time 16-20 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Ingredients list for Cubed Zucchini in Cashew Sauce 2 medium Zucchini cut into small cubes 1 tablespoon Oil 1 small Onion chopped 1/2 cup Fresh green peas 2 tablespoons Cashewnuts roasted and finely chopped 1 teaspoon Coriander seeds 1 teaspoon Cumin seeds 4 Cloves 1/2 inch stick Cinnamon 1 inch stick Ginger 1/4 teaspoon Lemon to taste Salt 1/4 teaspoon Red chilli powder Method Heat oil in a non stick pan, add onions and saute till soft. Add zucchini and green peas. Saute for two minutes. Make a paste with cashewnuts, coriander seeds, cumin seeds,cloves, cinnamon stick and ginger piece. Add the above paste to the pan and saute well. Add turmeric powder, salt and red chilli powder, and half cup water. Mix well. Cover and cook for ten minutes.
