Ingredients
- 2 medium zucchini, cut into small cubes
- 1 tablespoon oil
- 1 small onion, chopped
- 1/2 cup fresh green peas
- 2 tablespoons roasted and finely chopped cashewnuts
- 1 teaspoon coriander seeds
- 1 teaspoon cumin seeds
- 4 cloves
- 1/2 inch cinnamon stick
- 1 inch ginger
- 1/4 teaspoon turmeric powder
- Salt to taste
- 1/4 teaspoon red chilli powder
Method
- Heat oil in a non stick pan, add onions and saute till soft. Add zucchini and green peas. Saute for two minutes.
- Make a paste with cashewnuts, coriander seeds, cumin seeds,cloves, cinnamon stick and ginger piece.
- Add the above paste to the pan and saute well. Add turmeric powder, salt and red chilli powder, and half cup water. Mix well. Cover and cook for ten minutes.
- Serve hot with roti.
