Creamy Garlic Potatoes

Ingredients 

  • 4-5 medium potatoes, peeled
  • 1 cup milk
  • 1 tablespoon chopped garlic 
  • 2 tablespoons oil
  • Salt to taste
  • 4 spring onion bulbs with stems
  • 1 teaspoon crushed black peppercorns + for garnishing 
  • 3 garlic cloves
  • 1 tablespoon butter

Method

  1. Cut potatoes into small cubes.
  2. Heat oil in a non-stick pan, add chopped garlic and potatoes and mix well. Add salt and mix well.
  3. Add 1 cup milk, mix well, cover and cook.
  4. Cut spring onion bulbs into small cubes. Add them to the pan, mix well, cover and cook, stirring often so that the milk does not burn.
  5. Chop the spring onion stems into thin roundels.
  6. Add half the chopped spring onion stems and 1 teaspoon crushed peppercorns. Mix well, cover and cook on low heat till the potatoes are completely done.
  7. Crush the garlic cloves and add to the pan along with butter, mix well and cook for a minute.
  8. Serve hot garnished with crushed peppercorns and remaining spring onion stems.
