Ingredients list for Cranberry and Walnut Lemon Rice
- 1/3 cup U.S. Cranberries
 - 1/2 cup California Walnuts roasted and chopped
 - 1 Lemon
 - 3 cups Basmati rice cooked
 - 2 tablespoons Vegetable oil
 - 1 teaspoon Mustard seeds
 - 15-20 Curry leaves
 - 4 Green chillies
 - to taste Salt
 - 1/4 teaspoon Turmeric powder
 
Method
- Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add curry leaves, mix and sauté for a few seconds.
 - Add U.S. Cranberries and California Walnuts and toss well.
 - Slit green chillies and add into the pan. Add cooked rice and mix well.
 - Add ⅓ cup water and salt and mix well.
 - Squeeze the juice of lemon into the pan. Add turmeric powder and mix well.
 - Transfer into a serving bowl and serve hot.
