Ingredients list for Cranberry and Walnut Lemon Rice

  • 1/3 cup U.S. Cranberries
  • 1/2 cup California Walnuts roasted and chopped
  • 1 Lemon
  • 3 cups Basmati rice cooked
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Mustard seeds
  • 15-20 Curry leaves
  • 4 Green chillies
  • to taste Salt
  • 1/4 teaspoon Turmeric powder

Method

  1. Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add curry leaves, mix and sauté for a few seconds.
  2. Add U.S. Cranberries and California Walnuts and toss well.
  3. Slit green chillies and add into the pan. Add cooked rice and mix well.
  4. Add ⅓ cup water and salt and mix well.
  5. Squeeze the juice of lemon into the pan. Add turmeric powder and mix well.
  6. Transfer into a serving bowl and serve hot.
