Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Cranberry and Walnut Lemon Rice Recipe

  • U.S. Cranberries 1/3 cup

  • California Walnuts roasted and chopped 1/2 cup

  • Lemon 1

  • Basmati rice cooked 3 cups

  • Vegetable oil 2 tablespoons

  • Mustard seeds 1 teaspoon

  • Curry leaves 15-20

  • Green chillies 4

  • Salt to taste

  • Turmeric powder 1/4 teaspoon


Step 1

Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add curry leaves, mix and sauté for a few seconds.

Step 2

Add U.S. Cranberries and California Walnuts and toss well.

Step 3

Slit green chillies and add into the pan. Add cooked rice and mix well.

Step 4

Add ⅓ cup water and salt and mix well.

Step 5

Squeeze the juice of lemon into the pan. Add turmeric powder and mix well.

Step 6

Transfer into a serving bowl and serve hot.
