Corn was indigenous to America, but is now grown throughout the world. It is used as a vegetable, briefly boiled or roasted or eaten with butter. And it would also interest you to know that the favourite popcorn, made by popping the small corn kernels, is a wholesome cereal food and is easily digested. Besides this, corn sees its use in various other ways – salads, soups, subzis and even sweets too!

Ingredients for Corn Pancakes Recipe

  • Corn kernels boiled 3/4 cup

  • Refined flour 2 cups

  • Baking powder 1/2 teaspoon

  • Salt to taste

  • Black pepper powder 1/2 teaspoon

  • Egg 1

  • Milk 1/2 cup

  • Oil to fry

Method

Step 1

Sift flour, baking powder, salt and black pepper powder into a bowl.

Step 2

Whisk the egg in a mixer and add to the flour and mix well. Heat a non stick frying pan.

Step 3

Grind ½ cup corn with milk coarsely and add to the batter and mix. Add the remaining corn kernels and mix well.

Step 4

Drizzle a little oil in the pan, drop spoonsful of batter on it, keeping a little distance between each, and cook.

Step 5

When the underside is golden, turn them over and cook till both sides are evenly done.

Step 6

Serve hot topped with tomato relish or salsa or olives.
