How to make Congee -

How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Congee Recipe

  • Rice soaked 1 cup

  • Boneless chicken boiled and shredded 100 grams

  • Chicken stock 1 cup

  • Garlic cloves crushed 5-7

  • Ginger sliced 1 inch

  • Salt to taste

  • Spring onion with greens 1

  • Dried shiitake mushrooms soaked 4-6

  • Sesame oil (til oil) 2 tablespoons

  • Ginger cut into thin strips 1 inch

  • Light soy sauce 2 tablespoons

  • Red chilli sauce 1 tablespoon

Method

Step 1

Heat stock in a non-stick pan, add rice, garlic, ginger and salt.

Step 2

Slice spring onion bulb reserving the greens, add to pan, mix and bring to a boil. Cover and cook on medium heat till rice is fully done.

Step 3

Roughly chop mushrooms. Heat 1 tablespoon sesame oil in another non-stick pan, add ginger strips and mushrooms and sauté on high heat.

Step 4

Add chicken, salt and 1 tablespoon soy sauce and mix. Remove from heat and transfer into a bowl.

Step 5

Add remaining soy sauce and remaining sesame oil to rice mixture, mix, cover and cook for 2 minutes. Finely chop spring onion greens.

Step 6

Put the rice mixture into a serving bowl and top with some mushroom-chicken mixture, chilli sauce and spring onion greens on top. Serve hot.
