Ingredients list for Coconut Rice
- 1 cup Scraped coconut
- 2 cups Cooked rice cooled
- 2-3 tablespoons Oil
- 1/2 teaspoon Mustard seeds
- 2 Dried red chillies,broken
- 1 teaspoon Split black gram skinless (dhuli urad dal)
- 6-8 Curry leaves
- 1 inch piece Ginger,chopped
- 1 Green chilli,broken
- 1/4 cup Peanuts,deep fried
- to taste Salt
- 2-3 tablespoons Fresh coriander leaves
Method
- Heat oil in a non-stick pan. Add mustard seeds and let them splutter. Add red chillies, urad dal and sauté till the dal turns light brown. Add curry leaves, ginger and green chilli.
- Mix and add coconut and sauté for a while on low heat. Add peanuts and mix. Add rice and mix lightly. Add salt and mix lightly. Add coriander leaves and mix. Serve with sambhar.
