Ingredients list for Chilli Cheese Toast

  • 6 slices Brown bread
  • as required Butter
  • 1 slice Cheese
  • 3/4 cup Processed cheese grated
  • 2 tablespoons Onion finely chopped
  • 1 tablespoon Green capsicum finely chopped
  • 1 tablespoon Red capsicum finely chopped
  • 1 tablespoon Yellow capsicum finely chopped
  • 1 tablespoon Fresh coriander leaves finely chopped
  • to taste Salt
  • 1/2 teaspoon Dried red chilli flakes
  • 1/2 teaspoon Dried oregano
  • to taste Black peppercorns crushed
  • to serve Tomato ketchup

Method

  1. For cheese toast, apply butter on 2 bread slices, place 1 cheese slice on one slice, cover with the other, apply butter on top of the sandwich and place it on a griller and grill till golden brown marks appear.
  2. For chilli cheese toast, take cheese in a bowl, add onion, green capsicum, red capsicum, yellow capsicum and coriander leaves and mix well gently.
  3. Add salt, red chilli flakes, oregano and crushed black peppercorns. Mix well.
  4. Apply a little butter on the toast grilling in the griller and grill till it becomes crisp.
  5. Apply butter on 2 bread slices, spread a generous portion of the cheese mixture on one slice and cover with the other slice. .
  6. Place it on the griller and apply butter on both sides. Grill till golden brown and crisp.
  7. Meanwhile, to make open cheese toast, take 2 bread slices and spread cheese filling over them and bake in a preheated oven at 180ºC for 10-15 minutes at till the cheese melts and it becomes crisp and golden brown.
  8. Once the cheese toast is grilled, halve it diagonally, keep on a serving plate and serve hot with tomato ketchup.
