Ingredients list for Cheesy Jacket Potatoes

  • as required Processed cheese
  • 4 medium Potatoes medium
  • 3 tablespoons Butter
  • 2-3 Spring onion bulbs chopped
  • 1/2 cup Corn kernels
  • to taste Crushed black peppercorns
  • to taste Salt
  • 2 tablespoons Refined flour (maida)
  • 1 cup Milk
  • for garnishing Spring onion greens Chopped

Method

  1. Preheat oven at 180ºC.
  2. Halve the potatoes. Scoop out the flesh and reserve alongwith the shells.
  3. Heat 1 tablespoon butter in a non-stick pan. Add spring onion bulbs and corn kernels and mix well. Add crushed peppercorns and salt, mix and cook for a minute.
  4. Add the reserved potato flesh and crushed peppercorns and mix well. Remove from heat.
  5. To prepare white sauce, heat remaining butter in a non-stick pan. Add flour, mix and cook for a minute. Switch off the heat, add milk and mix well. Turn on the heat and sauté for 5-7 minutes. Add crushed peppercorns and salt, mix and cook for a minute. Switch off heat and set aside.
  6. Add the prepared white sauce to the prepared potato mixture and mix well.
  7. Place the potato shells on a baking tray.Fill each with the prepared potato-white sauce mixture. Grate some cheese over each potato jacket.
  8. Put the baking tray in preheated oven and bake for 10-14 minutes.
  9. Serve hot garnished with spring onion greens.
