Ingredients list for Caramalized Onion and Fig Open Sandwich
- 1 large Onion sliced
 - 3-4 Figs sliced
 - 2 Bread slices sour dough
 - 1 tablespoon Oil
 - 1 tablespoon Sugar powdered
 - ¾ cup Ricotta cheese
 - 2-3 Black olives pitted, finely chopped
 - 2-3 Green olives pitted, finely chopped
 - 1 teaspoon Capers finely chopped
 - 1 teaspoon Pickled onions finely chopped
 - to taste Salt
 - to taste Crushed black peppercorns
 - 1-2 Thyme sprigs
 - 1 teaspoon Balsamic vinegar
 - as required Arugula leaves
 - as required Alfalfa
 
Method
- Heat oil in a non-stick pan. Add onion and powdered sugar and sauté till it caramelizes.
 - Take ricotta cheese in a bowl. Add black olives, green olives, capers, pickled onions, salt, crushed peppercorns and mix well.
 - Add torn thyme sprigs to caramelized onion and sauté for 30 seconds. Add balsamic vinegar, mix and cook for 1-2 minutes.
 - Spread some ricotta cheese mixture on each bread slice. Put some arugula leaves, caramelized onion mixture and fig slices on top.
 - Sprinkle some salt and crushed peppercorns on top. Put some alfalfa on top.
 - Serve immediately.
