Ingredients for Burghul Salad with Tomato Dressing Recipe

  • Broken wheat (dalia/lapsi) 1/2 cup

  • Tomatoes 4 medium

  • Onions 4 medium

  • Salt to taste

  • Red chillies crushed 1 teaspoon

  • Walnuts chopped 1/4 cup

  • Pistachios chopped 1/4 cup

  • Extra virgin olive oil 1 1/2 tablespoons

  • Juice of 1 lemon

  • Fresh mint sprigs for garnishing

Method

Step 1

Cut tomatoes roughly and put into a blender jar and puree. Transfer into a bowl.

Step 2

Add dalia and mix well. Place in refrigerator for 10-15 minutes.

Step 3

Chop onions and add to tomato-dalia mixture along with salt, crushed red chillies, walnuts, pistachios, 1½ tbsps extra virgin olive oil and lemon juice and mix well.

Step 4

Transfer the salad onto a serving dish and drizzle little extra virgin olive oil on top. Garnish with mint sprig and serve immediately.
