How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Brown Rice Vegetable Pilaf Recipe

  • Brown basmati rice 2 cups

  • Carrots diced 2 medium

  • Bay leaf 1

  • Cloves 2-3

  • Cumin seeds 1 teaspoon

  • Cinnamon 1 inch stick

  • Salt to taste

  • Green peas shelled 1/2 cup

  • Rice bran oil 2 tablespoons

  • French beans chopped 10-12

  • Cauliflower separated into florets 1/4 medium

  • Button mushrooms halved 6-7 medium

  • Green chillies slit 2

  • Tofu cubed 100 grams

Method

Step 1

Soak brown rice in four to five cups of water for one hour. Drain and set aside.

Step 2

Heat rice bran oil in a deep pan. Add bay leaf, cloves, cumin seeds and cinnamon.

Step 3

Add drained rice and salt and sauté for one to two minutes. Add five cups of water. Bring to a boil.

Step 4

Add , cauliflower, mushrooms, green chillies and tofu. Stir green peas, carrots, French beansand mix. Bring to a boil. Reduce heat to low, cover and cook till done. Serve hot.
